Paella
Valencia is the home of paella. Valencian paella is believed to be the original recipe and consists of white rice, green beans (bajoqueta and tavella), meat (chicken and rabbit), white beans (garrofón), snails, and seasoning such as saffron and rosemary.
Horchata
Horchata is a refreshing brew made from the tiger nut, a tuber grown only in specific types of soil, making it exclusive to Valencia. That’s why it has designation of originstatus. It’s typically a summertime drink, usually accompanied by fartons (long sponge biscuits) and comes in three varieties: liquid, iced or mixed.
Tapas
Traditionally tapas are not as much a part of Valencia culture as they are in places like Madrid or Seville. However, this does not mean that there are not a wide selection of little tapas bars in Valencia city centre.
